Years Working in Food Service
She has spent 10 years working in Food Service, all here at Bethel. In the fall of 2011, she started as a student worker before becoming a student manager. Then she joined the team full time in 2017 as our Marketing Coordinator before transitioning to her current role as Office Administrator in February 2023.
What She Does at Bethel
Ashley spends her time handling the daily duties in the Sodexo office from managing finances to meal plans and answering staff and student's questions.
In Her Free Time
She enjoys going on adventures with friends, family, and her diabetic alert dog Mazie, a mini bernedoodle you might have seen around campus. She especially enjoys getting to disconnect from 'city life' and spend time with friends in nature at Rock Ridge in Ely, MN.
Her Favorite Food
As an admittedly picky eater, when she finds something she enjoys she is locked in. Her current favorite is a cabbage, carrot and kale salad with sunflower seeds, crumbled bacon, and creamy coleslaw style dressing. When all else fails, you will find her eating the classic go-to of chicken strips with ranch. It's a bonus if waffle fries or sweet potato fries are on the menu too!
